A festive and easy quiche recipe perfect for Christmas brunch. This no-crust quiche, featuring smoked ham, cheddar cheese, and a drizzle of cranberry sauce, brings holiday flavors together in one comforting dish.

- 2 tbsp pine nuts
- 2 tsp olive oil
- 1 leek, trimmed, thinly sliced
- 100g baby spinach
- 100g smoked ham, coarsely chopped
- 80g coarsely grated cheddar
- 4 eggs
- 100g (2/3 cup) self-raising flour
- 250ml (1 cup) milk
- 160ml (2/3 cup) cooking cream
- Cranberry sauce, warmed, to drizzle
Instructions
- Preheat the oven to 180°C (350°F).
- Toast pine nuts in a dry pan until golden; set aside.
- Heat olive oil in a frying pan over medium heat. Add leek and sauté until softened. Add spinach and cook until wilted.
- In a large bowl, whisk together eggs, flour, milk, and cream.
- Stir in the sautéed leek and spinach, ham, and cheddar cheese.
- Pour the mixture into a greased quiche dish.
- Bake for 35-40 minutes or until set and golden.
- Serve with a drizzle of warm cranberry sauce and a sprinkle of toasted pine nuts.
Notes
This quiche can be served hot or cold. Perfect for prepping ahead of time.
