Description

A festive and easy quiche recipe perfect for Christmas brunch. This no-crust quiche, featuring smoked ham, cheddar cheese, and a drizzle of cranberry sauce, brings holiday flavors together in one comforting dish.


Ingredients

  • 2 tbsp pine nuts
  • 2 tsp olive oil
  • 1 leek, trimmed, thinly sliced
  • 100g baby spinach
  • 100g smoked ham, coarsely chopped
  • 80g coarsely grated cheddar
  • 4 eggs
  • 100g (2/3 cup) self-raising flour
  • 250ml (1 cup) milk
  • 160ml (2/3 cup) cooking cream
  • Cranberry sauce, warmed, to drizzle

Instructions

  • Preheat the oven to 180°C (350°F).
  • Toast pine nuts in a dry pan until golden; set aside.
  • Heat olive oil in a frying pan over medium heat. Add leek and sauté until softened. Add spinach and cook until wilted.
  • In a large bowl, whisk together eggs, flour, milk, and cream.
  • Stir in the sautéed leek and spinach, ham, and cheddar cheese.
  • Pour the mixture into a greased quiche dish.
  • Bake for 35-40 minutes or until set and golden.
  • Serve with a drizzle of warm cranberry sauce and a sprinkle of toasted pine nuts.
