Description

Festive Antipasto Skewers in Wreath Arrangement with salami, bocconcini, and marinated veggies. Perfect for holiday appetizers or entertaining.

Dressing

  • 6 tbsp (90 ml) extra-virgin olive oil
  • 3 tbsp (45 ml) Angelo Provincia di Pavia Pinot Grigio
  • 3 tbsp (45 ml) fresh lemon juice
  • 1½ tsp (7.5 ml) clover honey
  • 1½ tsp (7.5 ml) dried oregano
  • ½ tsp (2.5 ml) dried thyme
  • 1 pinch red pepper chili flakes (optional)
  • 1 clove garlic, minced
  • 1 tsp (5 ml) Dijon mustard
  • ¼ tsp (1 ml) fine sea salt
  • Freshly ground black pepper, to taste

Skewers

  • 6 oz (170 g) salami, thinly sliced
  • 2 cups (500 ml) cherry tomatoes
  • 1 × 14 oz (398 g) can artichoke hearts, drained and quartered
  • 7 oz (200 g) mini bocconcini
  • 1 × 16 oz (450 g) jar sweet cherry peppers, drained and halved
  • Jarred pepperoncini, drained, to taste
  • 1 cup (250 ml) olives of your choice
  • 20 leaves fresh basil
  • 5 sprigs fresh rosemary

Instructions

  1. Prepare the Dressing:
    In a small bowl, whisk together olive oil, Pinot Grigio, lemon juice, honey, oregano, thyme, chili flakes (if using), minced garlic, Dijon mustard, salt, and pepper until well combined.
  2. Marinate Vegetables (Optional):
    For extra flavor, toss artichoke hearts, cherry peppers, and olives with 2–3 tbsp of the dressing and let sit for 15–20 minutes.
  3. Assemble Skewers:
    On wooden skewers, thread a combination of salami, cherry tomatoes, artichokes, mini bocconcini, olives, cherry peppers, and pepperoncini. Alternate colors and textures for visual appeal.
  4. Arrange in Wreath:
    Lay a circular serving platter and arrange skewers in a ring to create a wreath shape. Overlap slightly for fullness. Tuck fresh basil leaves and rosemary sprigs in between skewers for decoration.
  5. Drizzle Dressing:
    Just before serving, drizzle remaining dressing over the skewers to add shine and flavor.
  6. Serve and Enjoy:
    Guests can grab individual skewers or gently lift them from the wreath. Perfect for festive tables or cocktail parties.

Notes

Skewers can be assembled a few hours in advance and stored covered in the fridge.

Rotate ingredient order to ensure every skewer has a balance of flavor.
