- 1 pork tenderloin (1–2 pounds)
- 8–12 strips of bacon
- 1/4 cup brown sugar
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with foil or parchment paper.
- Trim silver skin from pork tenderloin and pat dry with paper towels.
- Lay bacon strips overlapping slightly, place tenderloin on top, and wrap tightly.
- Sprinkle brown sugar evenly over the bacon and press gently to help it stick.
- Place pork on prepared sheet and bake for 25–35 minutes, or until internal temperature reaches 145°F (63°C).
- Let rest for 5–10 minutes before slicing into medallions and serving.
Notes
Use a meat thermometer to avoid overcooking. For extra crispy bacon, broil for 2–3 minutes at the end. Pairs wonderfully with roasted vegetables, mashed potatoes, or a fresh green salad.
