Ingredients

  • ¼ cup bacon grease
  • ¼ cup all-purpose flour
  • 1 ½ cups warm milk (plus more as needed)
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Buttermilk biscuits, for serving

Instructions

  1. Render the bacon grease.
    Cook the bacon until crisp, reserving ¼ cup of the bacon grease in the skillet. Remove bacon, crumble, and set aside.
  2. Make the roux.
    Add the flour to the bacon grease and whisk constantly over medium heat for 2–3 minutes until lightly golden. This creates the base of your gravy.
  3. Add the milk.
    Slowly pour in the warm milk while whisking to avoid lumps. Continue whisking until the mixture begins to thicken.
  4. Season and add bacon.
    Stir in the crumbled bacon and season with salt and pepper. Add more milk if needed to reach your desired consistency.
  5. Serve.
    Spoon the bacon gravy over warm buttermilk biscuits and enjoy immediately.

Notes

Warm milk prevents lumps and helps the gravy thicken smoothly.

For extra flavor, sprinkle in a pinch of smoked paprika or a dash of hot sauce.

If gravy becomes too thick, whisk in more milk until smooth.
