- ¼ cup bacon grease
- ¼ cup all-purpose flour
- 1 ½ cups warm milk (plus more as needed)
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Buttermilk biscuits, for serving
Instructions
- Render the bacon grease.
Cook the bacon until crisp, reserving ¼ cup of the bacon grease in the skillet. Remove bacon, crumble, and set aside. - Make the roux.
Add the flour to the bacon grease and whisk constantly over medium heat for 2–3 minutes until lightly golden. This creates the base of your gravy. - Add the milk.
Slowly pour in the warm milk while whisking to avoid lumps. Continue whisking until the mixture begins to thicken. - Season and add bacon.
Stir in the crumbled bacon and season with salt and pepper. Add more milk if needed to reach your desired consistency. - Serve.
Spoon the bacon gravy over warm buttermilk biscuits and enjoy immediately.
Notes
Warm milk prevents lumps and helps the gravy thicken smoothly.
For extra flavor, sprinkle in a pinch of smoked paprika or a dash of hot sauce.
