Creamy baked Boursin cheese pasta with sundried tomatoes and spinach – a quick, flavorful, and easy dinner recipe.
Ingredients

1 (7-oz.) jar julienned sundried tomatoes in oil

2 cups cherry tomatoes

2 (5.2-oz.) packages Boursin Garlic and Fine Herbs cheese

12 oz. uncooked short pasta of choice

2 cups fresh spinach

Grated Parmesan cheese, for serving
Instructions

Preheat the Oven
Preheat your oven to 375°F (190°C). -
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta until just al dente according to package instructions. Drain and set aside. -
Prepare the Tomato Mixture
In a large mixing bowl, combine the julienned sundried tomatoes (with some of the oil), and fresh cherry tomatoes (halved if desired). Toss gently. -
Mix in Boursin Cheese
Add the two packages of Boursin cheese to the tomato mixture. Stir until the cheese softens and starts to blend with the tomatoes. -
Combine Pasta and Spinach
Add the cooked pasta and fresh spinach to the bowl. Toss everything together so the spinach wilts slightly from the warmth of the pasta and cheese. -
Bake the Pasta
Transfer the mixture to a baking dish and spread evenly. Sprinkle grated Parmesan cheese generously over the top. -
Bake and Serve
Bake uncovered for 15-20 minutes, until bubbly and golden on top. Remove from oven and let cool for a few minutes before serving.
Notes
Use pasta shapes that hold sauce well, like rigatoni or penne, for maximum flavor.
You can add a splash of reserved pasta water if the mixture looks too thick before baking.
For extra richness, stir in a splash of cream or milk with the Boursin cheese.
Fresh spinach wilts quickly—add it last to keep vibrant green color and nutrients.
Adjust Parmesan cheese on top to your liking for a golden crust.
