Crispy Baked Honey BBQ Chicken Bites with sweet-spicy sauce. Oven-baked, not fried. Perfect for weeknights, parties, and meal prep.

For the Chicken
- 2 pounds (907g) boneless skinless chicken breasts, cut into bite-sized pieces
- 1 cup (125g) all-purpose flour (spooned & leveled)
- 5 cups (140g) corn flakes cereal, crushed lightly
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 2 large eggs
- 1/4 cup (60g/ml) milk
For the Honey BBQ Sauce
- 3/4 cup (222g) your favorite BBQ sauce (Sweet Baby Ray’s Original recommended)
- 1/4 cup (85g) honey
- 1/4 cup (68g) ketchup
Instructions
- Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper or a silicone baking mat.
- Prepare the dredging stations: Place flour in one shallow bowl. In a second bowl, whisk eggs and milk together. In a third bowl, mix crushed corn flakes, salt, pepper, garlic powder, and smoked paprika.
- Coat the chicken: Dredge each chicken piece in flour, then egg mixture, then coat with the corn flakes mixture. Press gently to ensure the flakes stick well.
- Arrange on baking sheet: Place coated chicken pieces evenly spaced on the baking sheet.
- Bake: Bake for 18–22 minutes, flipping once halfway through, until golden brown and cooked through (internal temp 165°F / 74°C).
- Make the sauce: While the chicken bakes, combine BBQ sauce, honey, and ketchup in a saucepan over medium heat. Stir and let simmer for 5–7 minutes until slightly thickened.
- Coat the chicken: Once baked, toss hot chicken bites in the honey BBQ sauce or serve sauce on the side for dipping.
Notes
Crush corn flakes by hand or pulse briefly in a food processor.
For extra heat, add a pinch of cayenne or hot sauce to the BBQ glaze.
These bites are great for meal prep—just keep sauce and chicken separate until ready to eat.
Serve with ranch, blue cheese, or extra BBQ sauce for dipping.
