Ingredients
- 1 1/2 cups all-purpose flour
- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mash the bananas until mostly smooth with small lumps remaining.
- In a large bowl, cream together butter and sugar until light and fluffy, then beat in the egg and vanilla.
- Stir in the mashed bananas until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture, mixing gently until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden. Cool on a wire rack before serving.
Notes
Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Add chocolate chips or nuts for extra flavor.
