  • 6 oz. semisweet chocolate, chopped
  • 1 1/2 c. all-purpose flour
  • 1/2 c. unsweetened cocoa powder
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. kosher salt
  • 1/2 c. packed light brown sugar
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 1 1/2 c. granulated sugar, divided
  • 1 c. powdered sugar

Instructions

  • In a small saucepan, melt butter and semisweet chocolate together over low heat, stirring occasionally until smooth. Remove from heat and let cool.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • In a large bowl, beat together the brown sugar, 1 cup of the granulated sugar, and the eggs until thick and pale, about 2 minutes. Mix in the vanilla extract and cooled chocolate mixture.
  • Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • Cover the dough and refrigerate for at least 2 hours, or until firm enough to shape into balls.
  • Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper.
  • Scoop the dough into 1-inch balls. Roll each ball in the remaining granulated sugar, followed by the powdered sugar, ensuring they are well coated.
  • Place the cookie balls on the prepared baking sheets, about 2 inches apart.
  • Bake for 10–12 minutes, or until the edges are set and the tops are cracked.
  • Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
