Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 2 cups white sugar
  • 1 ¼ cups vegetable oil
  • 2 cups canned pumpkin
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup chopped walnuts (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch pan.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, beat the sugar and oil together. Add the pumpkin and vanilla, and mix well.
  4. Beat in the eggs one at a time. Gradually add the dry ingredients to the pumpkin mixture.
  5. Fold in the walnuts, if using. Pour the batter into the prepared pan.
  6. Bake for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Notes

For a richer flavor, let the cake sit overnight before serving.
