- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- ¼ teaspoon salt
- 2 cups white sugar
- 1 ¼ cups vegetable oil
- 2 cups canned pumpkin
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup chopped walnuts (Optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch pan.
- In a medium bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, beat the sugar and oil together. Add the pumpkin and vanilla, and mix well.
- Beat in the eggs one at a time. Gradually add the dry ingredients to the pumpkin mixture.
- Fold in the walnuts, if using. Pour the batter into the prepared pan.
- Bake for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
Notes
For a richer flavor, let the cake sit overnight before serving.
