A creamy, protein-packed breakfast bake made with cottage cheese, oats, and juicy blueberries. Perfect for meal prep and naturally sweetened.
Ingredients
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/2 cup fresh or frozen blueberries
- 2 large eggs
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- In a mixing bowl, whisk cottage cheese, eggs, honey, and vanilla until smooth.
- In a separate bowl, combine oats, cinnamon, baking powder, and salt.
- Stir dry ingredients into the wet mixture until well combined, then gently fold in blueberries.
- Pour batter into the prepared dish, spreading evenly. Bake for 35–40 minutes or until golden and set.
- Let cool for 10–15 minutes before slicing. Serve warm or chilled.
Notes
Store leftovers in the fridge for up to 4 days or freeze individual portions for up to 2 months. Serve with Greek yogurt, extra berries, or a drizzle of honey.
