Ingredients

  • 1 cup cottage cheese

  • 1/2 cup rolled oats

  • 1/2 cup fresh or frozen blueberries

  • 2 large eggs

  • 2 tbsp honey or maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/2 tsp baking powder

  • Pinch of salt

Instructions

  1. In a mixing bowl, whisk cottage cheese, eggs, honey, and vanilla until smooth.

  2. In a separate bowl, combine oats, cinnamon, baking powder, and salt.

  3. Stir dry ingredients into the wet mixture until well combined, then gently fold in blueberries.

  4. Pour batter into the prepared dish, spreading evenly. Bake for 35–40 minutes or until golden and set.

  5. Let cool for 10–15 minutes before slicing. Serve warm or chilled.

Notes
