- 2 tablespoons olive oil, divided
- 1 red onion, chopped
- Salt and ground black pepper to taste
- 2 whole Branzino (sea bass) fish, cleaned
- 4 lemon wedges, divided
- 2 sprigs fresh rosemary
- ½ cup white wine
- ¼ cup lemon juice
- 1 tablespoon fresh oregano leaves
- ¼ cup chopped Italian flat-leaf parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, drizzle 1 tablespoon of olive oil and add the chopped red onion. Season with salt and pepper.
- Place the cleaned Branzino on top of the onions. Stuff each fish with 2 lemon wedges and a sprig of rosemary.
- Drizzle the remaining olive oil over the fish. Pour the white wine and lemon juice into the dish.
- Sprinkle fresh oregano leaves and chopped parsley over the fish.
- Bake for 25-30 minutes or until the fish flakes easily with a fork.
