  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3 cups old-fashioned rolled oats

  • 1 1/2 cups chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

  3. Beat in the eggs one at a time, then mix in the vanilla extract.

  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to the wet mixture and stir until just combined.

  5. Fold in oats and chopped pecans until evenly distributed.

  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.

  7. Bake for 10–12 minutes, or until edges are golden brown.

  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For a softer texture, place a slice of bread in the container to maintain moisture.
