Ingredients

  • 1 cup unsalted butter, softened

  • 1 cup packed brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 cups old-fashioned oats

  • 1 cup chopped pecans

Instructions

  1. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.

  2. Beat in eggs one at a time, then stir in vanilla extract.

  3. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture.

  4. Fold in oats and pecans until evenly combined.

  5. Chill dough for 30 minutes, then preheat oven to 350°F (175°C).

  6. Scoop dough into rounded tablespoons on a lined baking sheet, spacing 2 inches apart.

  7. Bake for 10–12 minutes until edges are golden but centers remain soft.

  8. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra flavor, toast pecans lightly before adding. Store cookies in an airtight container for up to 5 days or freeze for longer storage.
