Description

Sweet, crisp, and nutty, this buttery cashew crunch is a simple homemade candy that makes a delightful snack or gift.


Ingredients

  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • 1 cup roasted cashew halves, toasted for extra flavor
  • 1 tablespoon unsalted butter

Instructions

  1. Prepare a baking sheet by lining it with parchment paper or a silicone mat. 
  2. Toast cashews in a 350°F (175°C) oven for 6–8 minutes until golden and fragrant. 
  3. In a heavy saucepan, combine sugar and corn syrup over medium heat, stirring until sugar dissolves. 
  4. Stop stirring and cook until the syrup reaches 300°F or a deep amber color. 
  5. Quickly stir in the cashews and butter, mixing until well combined. 
  6. Immediately pour the mixture onto the prepared sheet and spread it thinly. 
  7. Let cool completely, then break into pieces and store in an airtight container.

Notes

 For a sweet-salty twist, sprinkle flaky sea salt over the candy before it cools. Store at room temperature for up to 2 weeks.
