A bold twist on the classic sloppy joe with ground chicken and Cajun spices. Quick, flavorful, and perfect for weeknight dinners.
Ingredients

1 lb ground chicken

1 tbsp olive oil

1/2 onion, finely diced

1 bell pepper, finely diced

2 cloves garlic, minced

1 tbsp Cajun seasoning

1/2 cup tomato sauce or ketchup

1 tbsp Worcestershire sauce

1 tsp brown sugar (optional, for balance)

Salt and pepper to taste

4 sandwich buns, toasted
Instructions

Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until softened, about 5 minutes.

Stir in garlic and cook for 1 minute until fragrant.

Add ground chicken, breaking it apart with a spoon. Cook until browned and no longer pink, about 7–8 minutes.

Sprinkle Cajun seasoning over the chicken and stir well to coat evenly.

Mix in tomato sauce, Worcestershire sauce, and brown sugar. Reduce heat and simmer for 5–10 minutes until thickened.

Season with salt and pepper to taste. Spoon the mixture onto toasted buns and serve hot.
Notes
For extra heat, add a splash of hot sauce or diced jalapeños. The filling can be made ahead and stored in the fridge for up to 4 days or frozen for 2 months. Serve with coleslaw, fries, or a green salad.
