  • 2 cups flaked coconut (optional)
  • 1 stick butter
  • 8 oz cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 16 oz cool whip
  • 1 jar caramel ice cream topping
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 2 graham cracker or vanilla pie crusts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a medium saucepan over medium heat. Stir in the brown sugar, cinnamon, and pecans. Cook for 5 minutes, stirring frequently, then set aside to cool.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sweetened condensed milk, mixing until well combined.
  4. Gently fold in the cool whip until the mixture is light and fluffy.
  5. Spread a layer of caramel topping over the bottom of each pie crust.
  6. Evenly distribute the cream cheese mixture over the caramel layer.
  7. Sprinkle the cooled pecan mixture (and optional coconut) on top.
  8. Drizzle additional caramel sauce on top for garnish, then refrigerate the pies for at least 4 hours before serving.

Notes

For best results, allow the pie to chill overnight for a firmer filling.
