- 2 cups flaked coconut (optional)
- 1 stick butter
- 8 oz cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 16 oz cool whip
- 1 jar caramel ice cream topping
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 2 graham cracker or vanilla pie crusts
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a medium saucepan over medium heat. Stir in the brown sugar, cinnamon, and pecans. Cook for 5 minutes, stirring frequently, then set aside to cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sweetened condensed milk, mixing until well combined.
- Gently fold in the cool whip until the mixture is light and fluffy.
- Spread a layer of caramel topping over the bottom of each pie crust.
- Evenly distribute the cream cheese mixture over the caramel layer.
- Sprinkle the cooled pecan mixture (and optional coconut) on top.
- Drizzle additional caramel sauce on top for garnish, then refrigerate the pies for at least 4 hours before serving.
Notes
For best results, allow the pie to chill overnight for a firmer filling.
