Easy one pot Cheeseburger Casserole with ground beef, cheddar, and macaroni. Creamy, cheesy comfort food perfect for quick dinners.
Ingredients

3 ½ cups shredded cheddar cheese, at room temperature, separated

1 lb. ground beef (85% lean)

Salt and pepper, to taste

1 small yellow onion, diced

2 cloves garlic, minced

2 teaspoons Worcestershire sauce

2 tablespoons tomato paste

4 cups beef broth

1 (16 oz.) box elbow macaroni, uncooked

¾ cup sour cream, at room temperature

½ cup whole milk, at room temperature

Chopped parsley, for garnish
Instructions

Brown the Ground Beef: In a large deep skillet or Dutch oven over medium heat, add the ground beef. Season with salt and pepper and cook until browned, breaking it up with a spoon as it cooks.

Sauté Aromatics: Add the diced onion and minced garlic to the browned beef. Cook for 3-4 minutes until the onion becomes translucent and fragrant.

Add Flavorings: Stir in Worcestershire sauce and tomato paste. Cook for an additional 2 minutes to deepen the flavors.

Add Liquids and Pasta: Pour in the beef broth and bring to a gentle boil. Add the uncooked elbow macaroni, stirring to distribute evenly.

Simmer Pasta: Reduce heat to medium-low, cover, and simmer for about 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

Stir in Dairy and Cheese: Lower heat to low. Mix in sour cream, whole milk, and 2 cups of the shredded cheddar cheese. Stir thoroughly until creamy and melted.

Add Cheese Topping: Sprinkle the remaining 1 ½ cups of cheddar cheese evenly over the top. Cover and allow it to melt for a couple of minutes.
