Cheeseburger Casserole – One Pot Easy Recipe

Easy one pot Cheeseburger Casserole with ground beef, cheddar, and macaroni. Creamy, cheesy comfort food perfect for quick dinners.

  • 3 ½ cups shredded cheddar cheese, at room temperature, separated

  • 1 lb. ground beef (85% lean)

  • Salt and pepper, to taste

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 2 teaspoons Worcestershire sauce

  • 2 tablespoons tomato paste

  • 4 cups beef broth

  • 1 (16 oz.) box elbow macaroni, uncooked

  • ¾ cup sour cream, at room temperature

  • ½ cup whole milk, at room temperature

  • Chopped parsley, for garnish


Instructions

  1. Brown the Ground Beef: In a large deep skillet or Dutch oven over medium heat, add the ground beef. Season with salt and pepper and cook until browned, breaking it up with a spoon as it cooks.

  2. Sauté Aromatics: Add the diced onion and minced garlic to the browned beef. Cook for 3-4 minutes until the onion becomes translucent and fragrant.

  3. Add Flavorings: Stir in Worcestershire sauce and tomato paste. Cook for an additional 2 minutes to deepen the flavors.

  4. Add Liquids and Pasta: Pour in the beef broth and bring to a gentle boil. Add the uncooked elbow macaroni, stirring to distribute evenly.

  5. Simmer Pasta: Reduce heat to medium-low, cover, and simmer for about 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

  6. Stir in Dairy and Cheese: Lower heat to low. Mix in sour cream, whole milk, and 2 cups of the shredded cheddar cheese. Stir thoroughly until creamy and melted.

  7. Add Cheese Topping: Sprinkle the remaining 1 ½ cups of cheddar cheese evenly over the top. Cover and allow it to melt for a couple of minutes.

  8. Garnish and Serve: Sprinkle chopped parsley on top for color and freshness. Serve hot.
