Description

Juicy corn on the cob brushed with garlic butter and topped with melted cheese for a savory, crowd-pleasing side dish. Perfect for BBQs or family dinners.


Ingredients

  • 4 ears of corn, husked

  • 4 tbsp unsalted butter, melted

  • 2 cloves garlic, minced

  • 1/3 cup grated Parmesan or cotija cheese

  • 1 tbsp fresh parsley or cilantro, chopped (optional)

  • Salt and black pepper, to taste

  • Lime wedges, for serving (optional)


Instructions

  1. Bring a large pot of salted water to a boil and cook the corn for 6–8 minutes until tender, or grill until lightly charred.

  2. In a small bowl, mix melted butter with minced garlic, and let the flavors infuse for 1–2 minutes.

  3. Brush the hot corn generously with the garlic butter mixture, coating all sides evenly.

  4. Sprinkle the cheese over the corn while still warm so it melts slightly and clings to the kernels.

  5. Garnish with parsley or cilantro, add a squeeze of lime if desired, and serve immediately.

Notes

For a smoky flavor, grill the corn instead of boiling. Leftovers can be wrapped in foil and refrigerated for up to 3 days, then reheated in the oven.
