Description
Juicy corn on the cob brushed with garlic butter and topped with melted cheese for a savory, crowd-pleasing side dish. Perfect for BBQs or family dinners.
Ingredients
- 4 ears of corn, husked
- 4 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1/3 cup grated Parmesan or cotija cheese
- 1 tbsp fresh parsley or cilantro, chopped (optional)
- Salt and black pepper, to taste
- Lime wedges, for serving (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the corn for 6–8 minutes until tender, or grill until lightly charred.
- In a small bowl, mix melted butter with minced garlic, and let the flavors infuse for 1–2 minutes.
- Brush the hot corn generously with the garlic butter mixture, coating all sides evenly.
- Sprinkle the cheese over the corn while still warm so it melts slightly and clings to the kernels.
- Garnish with parsley or cilantro, add a squeeze of lime if desired, and serve immediately.
Notes
For a smoky flavor, grill the corn instead of boiling. Leftovers can be wrapped in foil and refrigerated for up to 3 days, then reheated in the oven.
