Description

These Cheesy Mashed Potato Muffins are a delicious way to reinvent your leftover mashed potatoes. With a crispy outside and a fluffy, cheesy inside, they’re perfect for any meal of the day.


Ingredients

  • 3 cups leftover mashed potatoes (See Kelly’s Notes)
  • 1 large egg
  • 1 cup shredded cheddar cheese, divided
  • 3 Tablespoons chopped fresh chives, divided

Instructions

  • Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  • In a large bowl, mix the mashed potatoes, egg, ¾ cup of cheddar cheese, and 2 Tablespoons of chives until well combined.
  • Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full. Top each muffin with the remaining cheddar cheese and chives.
  • Bake for 20-25 minutes, or until the muffins are golden brown and the cheese is melted and bubbly. Let cool slightly before serving.

Notes

  • For extra crispiness, use a mini muffin tin.
  • These muffins can be made ahead and frozen. Reheat in the oven for the best results.
