  • 1 pound smoked sausage (halal-certified, no pork)

  • 4 cups baby potatoes, halved or quartered

  • 2 tablespoons olive oil

  • 1 packet ranch seasoning mix (halal-certified)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon black pepper

  • 1½ cups shredded cheddar cheese (or a mix of your favorite cheeses)

  • ½ cup sour cream (optional, for serving)

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat oven
    Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or roasting pan.

  2. Prepare the potatoes
    In a large bowl, toss the halved or quartered baby potatoes with olive oil, ranch seasoning, garlic powder, onion powder, and black pepper until well coated.

  3. Roast the potatoes
    Spread the seasoned potatoes evenly onto the baking sheet. Roast for 20 minutes.

  4. Add the sausage
    While the potatoes roast, slice the smoked sausage into ½-inch pieces. After 20 minutes, add the sausage to the pan and stir everything together.

  5. Continue roasting
    Return the pan to the oven and roast for another 15–20 minutes, or until the potatoes are tender and golden and the sausage is lightly browned.

  6. Add the cheese
    Sprinkle shredded cheddar cheese evenly over the top. Return to the oven for 5 minutes, or until cheese is melted and bubbly.

  7. Garnish and serve
    Remove from oven and let cool slightly. Serve with a dollop of sour cream and chopped fresh parsley, if desired.

Notes

Cut potatoes uniformly so they cook evenly.

Use parchment paper for easy cleanup.

For extra crispiness, broil the dish for 2 minutes after the cheese melts.

Sharp cheddar gives a great contrast to the richness of the sausage.
