Ingredients

1 lb ground beef

½ cup breadcrumbs

¼ cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Worcestershire sauce

½ cup ketchup, divided

1 tablespoon mustard

3–4 oz cheddar or mozzarella cheese, cubed

Fresh parsley, chopped (optional for garnish)
Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, combine the ground beef, breadcrumbs, milk, egg, finely chopped onion, minced garlic, salt, black pepper, Worcestershire sauce, and half of the ketchup (¼ cup). Mix gently until just combined; avoid overmixing to keep the meatloaf tender.

Take a small handful of the meat mixture and flatten it into a patty in your palm. Place a cube of cheese in the center, then fold the meat around the cheese to form a tight ball, sealing the cheese completely inside.

Place the meatloaf bites on the prepared baking sheet, evenly spaced.

In a small bowl, mix the remaining ketchup with mustard and brush this mixture over each bite to create a tangy glaze.

Bake for 20–25 minutes or until the meat is cooked through and the cheese inside is melted and gooey.

Remove from the oven and let cool slightly before serving. Garnish with fresh parsley if desired.
Notes
Use good-quality ground beef with some fat content (80/20) for moist and flavorful bites.
Make sure to seal the cheese completely inside the meat to prevent it from leaking during baking.
You can substitute cheese cubes with shredded cheese rolled into balls, but cubes work best for a gooey center.
