Ingredients

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup sweetened shredded coconut

  • 1/2 cup chopped almonds

  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

  3. Beat in the egg and vanilla extract until well combined.

  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients into the wet mixture.

  5. Fold in coconut, almonds, and chocolate chips until evenly distributed.

  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.

  7. Bake for 10–12 minutes, or until edges are lightly golden but centers are still soft.

  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze baked cookies for up to 2 months.
