- 1/2 cup (1 stick) butter
- 4 cups rotisserie chicken meat, shredded
- 1 (15 ounce) bag frozen mixed vegetables (such as corn, peas, carrots, and beans)
- 1 (11.36 ounce) package Cheddar bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix®)
- 2 cups milk
- 1 (10.5 ounce) can cream of chicken soup
- 2 cups chicken stock
- 2 tablespoons fresh chopped parsley (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Melt the butter in a large baking dish in the preheating oven.
- Spread the shredded chicken and frozen mixed vegetables evenly in the baking dish.
- In a large bowl, combine the biscuit mix with the milk until just blended.
- Pour the cream of chicken soup and chicken stock into the baking dish, stirring gently to combine.
- Drop spoonfuls of the biscuit mixture over the top of the chicken and vegetable mixture.
- Bake for 35-40 minutes, or until the biscuit topping is golden brown and cooked through.
- Sprinkle with fresh parsley before serving, if desired.
Notes
Use fresh vegetables if preferred, adjust seasoning to taste.
