Ingredients

  • 1/2 cup (1 stick) butter
  • 4 cups rotisserie chicken meat, shredded
  • 1 (15 ounce) bag frozen mixed vegetables (such as corn, peas, carrots, and beans)
  • 1 (11.36 ounce) package Cheddar bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix®)
  • 2 cups milk
  • 1 (10.5 ounce) can cream of chicken soup
  • 2 cups chicken stock
  • 2 tablespoons fresh chopped parsley (optional)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Melt the butter in a large baking dish in the preheating oven.
  • Spread the shredded chicken and frozen mixed vegetables evenly in the baking dish.
  • In a large bowl, combine the biscuit mix with the milk until just blended.
  • Pour the cream of chicken soup and chicken stock into the baking dish, stirring gently to combine.
  • Drop spoonfuls of the biscuit mixture over the top of the chicken and vegetable mixture.
  • Bake for 35-40 minutes, or until the biscuit topping is golden brown and cooked through.
  • Sprinkle with fresh parsley before serving, if desired.

Notes

Use fresh vegetables if preferred, adjust seasoning to taste.
