Authentic and easy Chicken Rogan Josh recipe with rich spices and creamy yoghurt for a vibrant, flavorful Indian curry.
Ingredients

1.5 lbs bone-in chicken pieces (curry-cut) or boneless chicken thighs/breasts

2 medium shallot onions, thinly sliced or finely chopped

3 medium vine-ripened tomatoes, chopped (or 1 cup canned chopped tomatoes)

1/2 cup natural plain yoghurt

1 tbsp ghee or vegetable oil
-
1 tsp Kashmiri chilli powder
-
1 bay leaf
-
4 cardamom pods
-
1 tsp cumin seeds
-
1 small cinnamon stick
-
1 tsp curry powder or garam masala

1 tsp fennel powder or 1 tbsp roasted fennel seeds, ground

1 tsp minced garlic (optional)

Salt, to taste
Instructions

Prepare the Whole Spices
Heat ghee in a heavy-bottom pan over medium heat. Add bay leaf, cardamom pods, cumin seeds, and cinnamon stick. Sauté for about 1-2 minutes until fragrant. -
Cook the Onions
Add the sliced shallots or chopped onions. Cook gently, stirring occasionally, until golden and soft—about 7-8 minutes. -
Add Tomatoes and Spices
Stir in chopped tomatoes, Kashmiri chilli powder, curry powder or garam masala, and fennel powder. Cook until tomatoes break down and oil begins to separate—about 8-10 minutes. -
Add Chicken
Add chicken pieces and salt. Stir well to coat the chicken in the spice mixture. Cook for 5-7 minutes, allowing the chicken to brown slightly. -
Add Yoghurt
Lower the heat and slowly mix in the natural yoghurt, stirring continuously to prevent curdling. Cover and simmer gently for 30-40 minutes, until chicken is cooked through and tender. -
Final Seasoning and Serve
Taste and adjust seasoning as needed. Remove whole spices if desired before serving. Serve hot with steamed basmati rice or warm naan bread.
Notes
For extra depth, marinate chicken in yoghurt and spices for a few hours before cooking.
Using bone-in chicken adds richer flavor but boneless cooks faster.
Be patient cooking onions to develop sweetness and depth.
If you want extra heat, add a pinch of cayenne or fresh green chillies.
