Description
A wholesome oven-baked chicken dish layered with spinach, mushrooms, and mozzarella cheese. Low-carb, comforting, and perfect for weeknights.
Ingredients
- 6 thin-sliced chicken breasts
- 1 small bag fresh baby spinach
- 1 cup mushrooms, sliced
- 8 oz shredded mozzarella cheese
- Dash of pepper
- Dash of herb and garlic seasoning
- 1 tsp olive oil or cooking spray (for greasing dish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
- Season chicken breasts with pepper and herb and garlic seasoning on both sides.
- Place fresh spinach in the bottom of the baking dish and layer sliced mushrooms on top.
- Arrange seasoned chicken breasts evenly over the spinach and mushrooms.
- Sprinkle shredded mozzarella cheese generously over the chicken.
- Bake for 30–35 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
For extra flavor, add Italian herbs, chili flakes, or swap mozzarella with Swiss or provolone. Leftovers can be stored in the fridge for up to 3 days.
