Description

 Cool, creamy mint filling coated in rich chocolate makes these homemade patties irresistible. Perfect for gifting or enjoying as a sweet treat.


Ingredients

  • 1/3 cup light corn syrup
  • 5 tablespoons unsalted butter, softened
  • 1 1/2 teaspoons mint extract
  • 1/2 teaspoon salt
  • 4 cups powdered sugar
  • 3 cups semi-sweet or dark chocolate, chopped
  • 1 teaspoon shortening or coconut oil (optional, for smoother chocolate)

Instructions

  1. In a mixing bowl, beat together corn syrup, butter, mint extract, and salt until smooth. 
  2. Gradually add powdered sugar, mixing until a stiff dough forms. It should be firm but pliable. 
  3. Roll dough into small balls, flatten into discs, and place on a parchment-lined baking sheet. 
  4. Chill patties in the refrigerator or freezer for 30 minutes until firm. 
  5. Melt chocolate (and optional shortening) in a microwave or double boiler until smooth. 
  6. Dip each chilled patty into chocolate, coat completely, and place back on the sheet. 
  7. Let chocolate set at room temperature or refrigerate until hardened before serving.

Notes

Store patties in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months. For variety, drizzle with white chocolate or sprinkle with crushed peppermint.
