- 1/3 cup light corn syrup
- 5 tablespoons unsalted butter, softened
- 1 1/2 teaspoons mint extract
- 1/2 teaspoon salt
- 4 cups powdered sugar
- 3 cups semi-sweet or dark chocolate, chopped
- 1 teaspoon shortening or coconut oil (optional, for smoother chocolate)
Instructions
- In a mixing bowl, beat together corn syrup, butter, mint extract, and salt until smooth.
- Gradually add powdered sugar, mixing until a stiff dough forms. It should be firm but pliable.
- Roll dough into small balls, flatten into discs, and place on a parchment-lined baking sheet.
- Chill patties in the refrigerator or freezer for 30 minutes until firm.
- Melt chocolate (and optional shortening) in a microwave or double boiler until smooth.
- Dip each chilled patty into chocolate, coat completely, and place back on the sheet.
- Let chocolate set at room temperature or refrigerate until hardened before serving.
Notes
Store patties in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months. For variety, drizzle with white chocolate or sprinkle with crushed peppermint.
