 - 2 cups confectioners’ sugar
 
Instructions
- Preheat oven to 350°F (175°C).
 - In a large bowl, combine sugar, cocoa powder, and vegetable oil until smooth.
 - Add eggs and vanilla extract, mixing until fully incorporated.
 - Sift together the flour, baking powder, and salt, then fold into the wet ingredients.
 - Chill dough for at least 2 hours or overnight.
 - Roll dough into 1-inch balls, then roll each in confectioners’ sugar to coat generously.
 - Place on a baking sheet and bake for 10-12 minutes or until cookies have crinkled and are firm on the edges.
