  • Author: Sarah White

Description

A festive Christmas Poke Cake with cherry and lime jello, whipped topping, and sprinkles. Simple, colorful, and delicious for holidays.

Ingredients

Scale
  • 1 box (15.25 ounces) white cake mix + ingredients to prepare
  • 1 package (3 ounces) lime Jell-O mix
  • 1 package (3 ounces) cherry Jell-O mix
  • 2 cups water, divided
  • 8 ounces Cool Whip, thawed
  • Christmas sprinkles

Instructions

1. Prepare the cake.
Bake the white cake according to package directions in a 9×13-inch pan. Let it cool for 15 minutes.

2. Poke the holes.
Using a wooden spoon handle, poke holes all over the cake, spacing them evenly.

3. Prepare the gelatins.
In two separate bowls, mix each Jell-O flavor with 1 cup of boiling water until dissolved.

4. Pour the gelatin.
Drizzle the cherry mixture into half the holes and the lime mixture into the remaining holes. Refrigerate for at least 2 hours.

5. Add the topping.
Spread Cool Whip evenly over the chilled cake.

6. Decorate.
Sprinkle festive Christmas sprinkles on top.

7. Serve.
Slice and enjoy chilled.

Notes

For deeper colors, use ¾ cup water per Jell-O instead of 1 cup.

Ensure the cake is cooled before adding gelatin or the colors may bleed.

Chill overnight for the cleanest slices.

Use a squeeze bottle for more precise filling of holes.
