Christmas Rocky Road Bars – Easy No-Bake Holiday Treat

No-bake Christmas Rocky Road Bars with chocolate, marshmallows, and graham crumbs make a festive, easy holiday treat.


Ingredients

  • 2 cups (200 g) graham cracker crumbs
  • ¼ cup (25 g) unsweetened cocoa powder
  • 1½ cups (180 g) powdered sugar
  • ¾ cup (170 g) unsalted butter, melted
    Substitute: ¾ cup (150 g) melted coconut oil for dairy-free option
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 3 cups (150 g) mini marshmallows
  • 1½ cups (270 g) chocolate chips
  • ½ cup (60 g) chopped nuts (optional)

Instructions

  1. Prepare the pan:
    Line an 8×8 or 9×9 inch baking dish with parchment, leaving overhang for easy removal.
  2. Combine dry ingredients:
    In a large bowl, mix graham cracker crumbs, powdered sugar, and cocoa powder.
  3. Add melted butter:
    Pour in melted butter and stir until evenly moistened.
  4. Mix in condensed milk:
    Add the sweetened condensed milk and stir until a thick, sticky mixture forms.
  5. Add chocolate chips, marshmallows, and nuts:
    Fold in mini marshmallows, chocolate chips, and optional nuts until everything is coated.
  6. Press into pan:
    Transfer mixture into the prepared baking dish and press firmly into an even layer.
  7. Chill:
    Refrigerate at least 3 hours or until firm. Overnight is best.
  8. Cut & serve:
    Lift out using parchment and slice into bars or squares.

Notes

Wet your hands lightly when pressing the mixture—it prevents sticking.

Toast nuts beforehand for richer flavor.

Add festive red and green sprinkles for an even more Christmas-y touch.

For cleaner cuts, chill the bars extra firm and use a hot knife.
