Ingredients

  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 medium apples, peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cinnamon sugar for topping
  • Optional glaze: 1/2 cup powdered sugar, 1–2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan, optionally lining with parchment.

  2. Cream butter and sugar together until light and fluffy.

  3. Beat in eggs, one at a time, then mix in vanilla extract.

  4. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.

  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.

  6. Toss diced apples with sugar and cinnamon, then fold into the batter.

  7. Pour batter into the prepared pan and sprinkle additional cinnamon sugar on top.

  8. Bake for 55–65 minutes, or until a toothpick comes out clean.

  9. Cool in the pan for 10 minutes, then transfer to a cooling rack.

  10. Optional: drizzle with powdered sugar glaze once slightly cooled.
