Country Ranch Green Beans ‘n Potatoes with Bacon

Description

A hearty, flavorful side dish combining tender green beans, baby potatoes, and crispy bacon. Perfect for family dinners.


Ingredients

  • 1 pound fresh green beans, trimmed

  • 1 ½ pounds baby potatoes (red or Yukon gold), halved or quartered

  • 6 slices bacon, cooked and crumbled

Instructions

  1. Bring a large pot of salted water to a boil. Add the baby potatoes and cook until tender, about 10–12 minutes.

  2. In the last 3–4 minutes of potato cooking, add the green beans to the same pot. Drain and set aside.

  3. In a large skillet over medium heat, add the cooked bacon and potatoes with green beans. Toss to combine.

  4. Season with salt and pepper to taste and cook for 2–3 minutes until everything is heated through.

  5. Serve warm, garnished with extra crumbled bacon if desired.

Notes

For added flavor, toss with a tablespoon of butter or a sprinkle of fresh herbs like parsley. Store leftovers in an airtight container in the fridge for up to 3 days.
