Ingredients
- 1 pound ground turkey
- 2 cups breadcrumbs (or leftover stuffing)
- 1 cup cooked or dried cranberries
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or fresh herbs of choice)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg, lightly beaten
- 2 tablespoons olive oil (for brushing or drizzling)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground turkey, breadcrumbs, cranberries, onion, garlic, herbs, salt, and pepper. Mix until evenly combined.
- Add the beaten egg to help bind the mixture and mix gently until incorporated.
- Scoop portions with a tablespoon or cookie scoop and roll into balls. Place on the prepared baking sheet.
- Brush or drizzle lightly with olive oil. Bake for 20–25 minutes, or until golden brown and cooked through (165°F internal temperature).
- Remove from the oven and let cool slightly before serving.
Notes
These stuffing balls pair beautifully with gravy or cranberry sauce. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in the oven until warmed through.
