Creamy and Cheesy Beef Goulash Recipe

Description

 hearty one-pot beef goulash with tender pasta, rich tomato sauce, and plenty of melted cheese. Comfort food perfect for weeknights.


Ingredients

  • 2 lbs ground beef or turkey

  • 3 tsp minced garlic

  • 1 large yellow onion, diced

  • 2 cups elbow macaroni, uncooked

  • 2 cans (15 oz each) tomato sauce

  • 1 can (14.5 oz) diced tomatoes

  • 2 tbsp tomato paste

  • 2 cups beef broth

  • 1 tsp paprika

  • 2 tsp Italian seasoning

  • 1/2 tsp red pepper flakes (optional)

  • 1 cup sour cream or heavy cream

  • 2 cups shredded cheddar cheese, divided

  • 2 tbsp olive oil

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  1. set aside.

  2. In a large pot, heat olive oil and sauté onion until translucent. Add garlic and cook until fragrant.

  3. Add ground beef, season with salt and pepper, and cook until browned. Drain excess grease if needed.

  4. Stir in tomato sauce, diced tomatoes, tomato paste, beef broth, and seasonings. Simmer for 10 minutes.

  5. Add pasta back into the pot and stir well to coat with sauce. Let simmer for 5 minutes.

  6. Mix in sour cream and half of the cheese until creamy. Sprinkle remaining cheese on top, cover, and let melt.

  7. Garnish with parsley and serve warm with bread or salad.

Notes

 For extra flavor, add diced bell peppers or mushrooms. Leftovers keep in the fridge up to 4 days or freeze up to 3 months. Reheat with a splash of broth to maintain creaminess.
