- 12 oz pasta (penne, fettuccine, or rotini work well)
- 1 can cream of mushroom soup
- 4 cups sliced mushrooms
- ¼ cup chicken broth
- ¼ cup milk
- 2 tablespoons olive oil
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon Italian seasoning
- ½ teaspoon garlic salt
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until softened and lightly browned.
- Stir in cream of mushroom soup, chicken broth, and milk until smooth.
- Add Italian seasoning and garlic salt, mixing well.
- Simmer the sauce for 3–5 minutes, allowing it to thicken slightly.
- Add cooked pasta to the skillet and toss until evenly coated in sauce.
- Sprinkle Parmesan cheese over the pasta and stir gently to combine.
- Taste and adjust seasoning if needed.
- Serve warm with extra Parmesan if desired.
Notes
Reserve a bit of pasta water to loosen the sauce if it becomes too thick.
Use freshly grated Parmesan for better melting and flavor.
