  • Author: Sarah White

Description

Rich and comforting Creamy Mushroom Pasta made with mushrooms, Parmesan, and Italian seasoning—an easy weeknight favorite.

Ingredients

Scale
  • 12 oz pasta (penne, fettuccine, or rotini work well)
  • 1 can cream of mushroom soup
  • 4 cups sliced mushrooms
  • ¼ cup chicken broth
  • ¼ cup milk
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • ½ teaspoon garlic salt

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until softened and lightly browned.
  4. Stir in cream of mushroom soup, chicken broth, and milk until smooth.
  5. Add Italian seasoning and garlic salt, mixing well.
  6. Simmer the sauce for 3–5 minutes, allowing it to thicken slightly.
  7. Add cooked pasta to the skillet and toss until evenly coated in sauce.
  8. Sprinkle Parmesan cheese over the pasta and stir gently to combine.
  9. Taste and adjust seasoning if needed.
  10. Serve warm with extra Parmesan if desired.

Notes

Reserve a bit of pasta water to loosen the sauce if it becomes too thick.

Use freshly grated Parmesan for better melting and flavor.
