Creamy Pepperoncini Chicken Skillet is a rich, tangy one-pan meal made with chicken, cream, peppers, and Italian seasoning.


Ingredients

  • 2 tbsp butter
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained (sliced, ring, or whole)

Instructions

  1. Season the Chicken
    Toss chicken strips with sea salt and ground pepper.
  2. Sear the Chicken
    Melt 2 tbsp butter in a large skillet over medium-high heat. Add the chicken strips and cook until lightly browned. Remove and set aside.
  3. Cook the Aromatics
    In the same skillet, add diced onion and garlic. Cook until softened and fragrant.
  4. Deglaze the Pan
    Pour in the chicken stock, scraping up browned bits from the bottom.
  5. Add the Vegetables
    Stir in roasted red peppers and pepperoncini.
  6. Make the Cream Sauce
    Reduce heat. Add heavy cream, Parmesan, and Italian seasoning. Stir until creamy and smooth.
  7. Return Chicken to Skillet
    Add the chicken back into the sauce and simmer until fully cooked and thickened.
  8. Serve
    Spoon over rice, pasta, potatoes, or bread.

Notes

Slice chicken uniformly for even cooking.

Add pepperoncini brine for extra tanginess.

Simmer gently to avoid curdling the cream.
