Ingredients

2 large sweet onions, finely chopped

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

2/3 cup milk

2 large eggs

Vegetable oil, for frying
Instructions

Finely chop the sweet onions and set aside.

In a large bowl, whisk together flour, sugar, baking powder, salt, and pepper.

Add milk and eggs to the dry ingredients, mixing until a smooth batter forms.

Fold in the chopped onions until evenly coated.

Heat oil in a deep skillet over medium heat until hot but not smoking.

Drop spoonfuls of batter into the oil and fry until golden brown on both sides, about 2–3 minutes per side.

Remove with a slotted spoon and drain on paper towels before serving warm.
Notes
Best served hot with ranch, aioli, or ketchup. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven or air fryer to crisp up again.
