Crispy Cheesy Corn Sticks

Description

Golden, crunchy on the outside and gooey cheesy inside, these corn sticks make the perfect snack or appetizer for any occasion.


Ingredients

  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 cup shredded mozzarella cheese (or cheddar)
  • 2 tbsp cream cheese, softened
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying

Instructions

  1. In a bowl, mix corn kernels, mozzarella, cream cheese, salt, and pepper until combined. 
  2. Shape the mixture into small sticks or logs about 3 inches long. Chill for 20–30 minutes to firm up. 
  3. Roll each stick in flour, dip in beaten egg, and coat with breadcrumbs for a crispy finish. 
  4. Heat oil in a pan to medium-high. Fry sticks in batches until golden brown, about 3–4 minutes. 
  5. Drain on paper towels and serve hot with your favorite dipping sauce.

Notes

Best enjoyed fresh, but you can freeze shaped, uncooked sticks for up to 2 months. Bake or air-fry instead of frying for a lighter version.
