Description

Golden, crunchy on the outside and tender on the inside, this fried cornbread is a perfect comfort snack or side dish.


Ingredients

  •  1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter or vegetable oil
  • Vegetable oil for frying

Instructions

  1. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt until well combined.

  2. In a separate bowl, mix milk, eggs, and melted butter until smooth.

  3. Gradually stir wet ingredients into dry ingredients until just combined, forming a thick batter.

  4. Heat 1/4 inch of vegetable oil in a skillet over medium heat until hot and shimmering.

  5. Drop spoonfuls of batter into the oil, frying 2–3 minutes per side until golden brown.

  6. Remove fried cornbread with a slotted spoon and drain on paper towels or a wire rack.

  7. Serve warm as a snack, side dish, or with honey, butter, or jam.

Notes

For a sweeter twist, drizzle with honey or maple syrup. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness.
