- 4 large potatoes
- 1 yellow onion
- 1 egg, beaten
- 1 teaspoon salt
- Ground black pepper to taste
- 2 tablespoons all-purpose flour, or more as needed
- 1 cup vegetable oil for frying, or as needed
Instructions
- Peel and grate the potatoes and onion. Squeeze out excess moisture using a cheesecloth or a clean kitchen towel.
- In a large bowl, combine the grated potatoes and onion with the beaten egg, salt, pepper, and flour. Mix until well combined.
- Heat the vegetable oil in a large skillet over medium-high heat. Drop spoonfuls of the potato mixture into the skillet, flattening them with a spatula to form pancakes.
- Fry until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with sour cream or applesauce, if desired.
Notes
For extra crispiness, make sure to squeeze out as much moisture as possible from the potatoes. Adjust seasoning according to taste.
