Burger Sauce
- ¼ cup mayonnaise
- 2 tbsp ketchup
- 2 tbsp chopped dill pickle
- 2 tsp yellow mustard
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ⅛ tsp salt
- ⅛ tsp black pepper
Tacos
- 8 mini flour tortillas (street taco size)
- 1 lb lean ground beef (90% lean)
- ½ tsp salt
- ¼ tsp black pepper
- 8 slices American cheese
- ½ cup shredded lettuce
- ½ cup sliced sweet pickles
- ¼ cup finely chopped onion
- ¼ cup finely chopped tomatoes (optional)
Instructions
- In a small bowl, mix all burger sauce ingredients until smooth. Set aside.
- Divide the ground beef into 8 equal portions.
- Press each portion of beef evenly onto one side of a tortilla, spreading it thin to the edges.
- Season the beef side with salt and pepper.
- Heat a large skillet or griddle over medium-high heat.
- Place tortillas beef-side down into the hot pan and press firmly with a spatula.
- Cook for 2–3 minutes until the beef is deeply browned and crispy.
- Flip the tortillas, add a slice of American cheese, and cook for 1–2 minutes until melted.
- Remove from heat and top with lettuce, pickles, onion, tomatoes (if using), and a drizzle of burger sauce.
- Fold and serve immediately.
Notes
Use a very hot pan for best browning.
Don’t overwork the beef—it should be thin and loosely pressed.
Serve right away for maximum crispiness.
