Description

Creamy, cheesy, and loaded with bacon, this Crock Pot Crack Potato Soup is the ultimate comfort food. Perfect for busy weeknights or cozy weekends.


Ingredients

  • 6 cups diced potatoes, peeled

  • 1 cup shredded cheddar cheese

  • 1/2 cup cooked and crumbled bacon

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup cream cheese, softened

  • 1 cup sour cream

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon smoked paprika

  • 1/4 cup chopped green onions (for garnish)


Instructions

  1. Add diced potatoes, onion, garlic, chicken broth, salt, pepper, and smoked paprika to the crock pot. Stir to combine.

  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.

  3. Mash some of the potatoes directly in the crock pot for a thicker texture, leaving some chunks for heartiness.

  4. Stir in cream cheese and sour cream until smooth and fully incorporated.

  5. Add shredded cheddar cheese and stir until melted and creamy.

  6. Mix in half of the crumbled bacon, reserving the rest for topping.

  7. Serve hot, garnished with remaining bacon, cheddar cheese, and green onions.

Notes

 For extra richness, top each bowl with a dollop of sour cream. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
