Cozy and hearty Crockpot Chicken Parmesan Soup with tender chicken, savory tomato broth, and melted cheese. A comforting slow cooker meal.
Ingredients

1 lb (450 g) boneless, skinless chicken breasts

4 cups chicken broth

1 can (14.5 oz) diced tomatoes with juices

1 medium onion, diced

3 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional)

1/2 cup freshly grated Parmesan cheese

1/2 cup shredded mozzarella cheese (optional, for topping)

1/4 cup fresh basil or parsley, chopped

1 1/2 cups cooked pasta or rice (optional, for serving)
Instructions

Place chicken breasts in the bottom of a 6-quart crockpot.

Add chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes. Stir gently.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.

Remove chicken, shred with two forks, and return it to the crockpot. Stir to combine.

Stir in Parmesan cheese about 15 minutes before serving.

Ladle soup into bowls and top with mozzarella cheese and fresh basil or parsley. Serve with pasta, rice, or crusty bread if desired.
Notes
Leftovers keep in the fridge for up to 4 days or can be frozen for up to 3 months. Add pasta or rice just before serving to prevent it from getting too soft.
