Crockpot French Onion Meatloaf with Melted Swiss Cheese

Description

Juicy slow-cooked meatloaf with caramelized onions and melted Swiss cheese. A comforting main dish with rich, savory flavor.


Ingredients

  • 2 pounds ground beef

  • 1 cup breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup milk

  • 2 large eggs

  • 2 tablespoons Worcestershire sauce

  • 3 large onions, thinly sliced and caramelized

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup beef broth

  • 68 slices Swiss cheese


Instructions

  1. In a skillet, cook sliced onions in butter over medium-low heat until golden and caramelized, about 20 minutes. Set aside.

  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, garlic, Worcestershire, salt, and pepper. Mix gently until just combined.

  3. Shape the mixture into a loaf and place it in the slow cooker on top of half the caramelized onions.

  4. Top with the remaining onions and pour beef broth around the loaf. Cover and cook on low for 6–7 hours or high for 3–4 hours.

  5. About 10 minutes before serving, place Swiss cheese slices over the meatloaf, cover, and let melt until gooey.

  6. Let rest for 5 minutes before slicing. Serve with onions and broth spooned on top.

Notes

For a leaner option, substitute ground turkey or chicken. Leftovers keep in the fridge for 4 days or freeze up to 3 months. Serve with mashed potatoes, roasted vegetables, or a fresh salad.
