Description
Juicy slow-cooked meatloaf with caramelized onions and melted Swiss cheese. A comforting main dish with rich, savory flavor.
Ingredients
-
2 pounds ground beef
-
1 cup breadcrumbs
-
1/2 cup grated Parmesan cheese
-
1/4 cup milk
-
2 large eggs
-
2 tablespoons Worcestershire sauce
-
3 large onions, thinly sliced and caramelized
-
2 cloves garlic, minced
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1 cup beef broth
-
6–8 slices Swiss cheese
Instructions
-
In a skillet, cook sliced onions in butter over medium-low heat until golden and caramelized, about 20 minutes. Set aside.
-
In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, garlic, Worcestershire, salt, and pepper. Mix gently until just combined.
-
Shape the mixture into a loaf and place it in the slow cooker on top of half the caramelized onions.
-
Top with the remaining onions and pour beef broth around the loaf. Cover and cook on low for 6–7 hours or high for 3–4 hours.
-
About 10 minutes before serving, place Swiss cheese slices over the meatloaf, cover, and let melt until gooey.
-
Let rest for 5 minutes before slicing. Serve with onions and broth spooned on top.
Notes
For a leaner option, substitute ground turkey or chicken. Leftovers keep in the fridge for 4 days or freeze up to 3 months. Serve with mashed potatoes, roasted vegetables, or a fresh salad.
