Light, fresh, and protein-packed, these cucumber cottage cheese wraps make the perfect no-cook snack or light meal.


Ingredients

  • 1 large cucumber, peeled and sliced lengthwise into thin ribbons

  • 1 cup cottage cheese (low-fat or full-fat)

  • Salt and black pepper, to taste

  • 1 tablespoon fresh herbs (dill, parsley, or chives), chopped

  • 1 teaspoon olive oil (optional)

  • 1 tablespoon sunflower or sesame seeds (optional garnish)


Instructions

  1. Wash and peel the cucumber, then slice lengthwise into thin ribbons using a mandoline or vegetable peeler. Pat dry with a paper towel.

  2. In a mixing bowl, season cottage cheese with salt, pepper, and fresh herbs. Stir gently until well combined.

  3. Lay one cucumber ribbon flat, place a spoonful of cottage cheese mixture on one end, and roll tightly to form a wrap. Repeat with remaining ribbons.

  4. Arrange wraps on a platter and garnish with seeds, herbs, or a light drizzle of olive oil. Serve immediately for best texture.

Notes

Best enjoyed fresh. Prepare the cottage cheese filling ahead of time and assemble wraps just before serving. Freezing not recommended.
