For the Crust:

For the Cheesecake:
- 4 packages (8 ounces each) PHILADELPHIA Cream Cheese, softened
- ½ cup brown sugar
- ½ cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon vanilla extract
- 1 cup sour cream
- 4 large eggs
For the Pecan Topping:
- 6 tablespoons unsalted butter
- ¾ cup brown sugar
- ½ cup heavy cream
- ½ teaspoon ground cinnamon
- 1 ¾ cups whole or chopped pecans
Instructions
- Preheat the oven to 325°F (163°C). Prepare a 9-inch springform pan by lining the bottom with parchment paper and greasing the sides.
- Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the bottom of the prepared pan and bake for 10 minutes. Let cool.
- Cheesecake: In a large bowl, beat the softened cream cheese, brown sugar, granulated sugar, and flour until smooth. Add the vanilla and sour cream, mixing until combined. Add the eggs one at a time, beating on low speed until just blended. Pour the batter over the crust.
- Bake for 60-70 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool inside the oven with the door slightly open for 1 hour.
- Pecan Topping: In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, heavy cream, and cinnamon. Bring to a boil and simmer for 3-4 minutes until slightly thickened. Stir in the pecans.
- Pour the pecan topping over the cooled cheesecake. Chill for at least 4 hours or overnight before serving.
