Description
Crispy, golden bites filled with creamy ranch chicken, smoky bacon, and melted cheddar cheese. Perfect as a party snack or appetizer.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1 packet ranch seasoning mix (about 1 oz)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- Vegetable oil, for frying
Instructions
- In a large bowl, mix shredded chicken, cream cheese, cheddar cheese, bacon bits, and ranch seasoning until well combined.
- Roll the mixture into golf ball-sized portions and place them on a baking sheet. Chill for 30 minutes to firm up.
- Prepare three bowls for breading: flour, beaten eggs, and breadcrumbs. Roll each ball in flour, dip in egg, and coat with breadcrumbs.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the balls in batches for 3–4 minutes until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite dipping sauce.
Notes
For extra crunch, double coat in egg and breadcrumbs. Store leftovers in an airtight container for up to 3 days. Reheat in the oven to keep crispy.
