Description
A beautiful, flavorful tart with spiced Pink Lady apples arranged in delicate layers over a Biscoff spice cookie crust, topped with a creamy filling and a glossy apple jelly glaze.

- 3 large (about 1 1/2 lbs.) Pink Lady apples, cored and cut into 1/8“-thick slices
- 1/4 c. packed light brown sugar
- 1 1/2 tsp. apple pie spice
- 1/4 c. plus 2 tbsp. granulated sugar, divided
- 1 1/4 tsp. kosher salt, divided
- 1 (8.8-oz.) package spice cookies (such as Biscoff)
- 3 Tbsp. unsalted butter, melted, plus 1 1/2 tbsp., cut into pieces
- 1 large egg white
- 1 (8-oz.) package cream cheese, at room temperature
- 2 Tbsp. confectioners’ sugar
- 2 Tbsp. apple jelly, melted
Instructions
- Preheat the oven to 350°F. Grease a tart pan with butter or non-stick spray.
- In a food processor, pulse the spice cookies until finely ground. Add 1/4 tsp. kosher salt and melted butter. Pulse until the mixture resembles wet sand.
- Press the cookie mixture into the bottom and up the sides of the tart pan to form the crust. Bake for 10 minutes, then let cool.
- In a bowl, mix cream cheese, confectioners’ sugar, and 1 tbsp. granulated sugar until smooth.
- Spread the cream cheese mixture over the cooled crust.
- Toss apple slices with brown sugar, apple pie spice, remaining granulated sugar, and 1 tsp. kosher salt.
- Arrange apple slices in overlapping concentric circles on top of the cream cheese layer.
- Dot the apples with pieces of butter. Bake for 35-40 minutes until apples are tender.
- Brush the apples with melted apple jelly to create a glossy finish.
Notes
For extra flavor, consider adding a splash of vanilla extract to the cream cheese mixture.
