- These spooky and delicious Halloween Monster Cookies combine buttery shortbread with a sweet jam center for a monstrous twist. Perfect for Halloween celebrations!

- 200 g 00 flour
- 100 g potato starch
- 100 g icing sugar
- 120 g butter
- 1 egg
- 1 egg yolk
- 1 pinch salt
- To taste: strawberry jam
Instructions
- Preheat the oven to 180°C (350°F) and line baking trays with parchment paper.
- In a food processor, combine flour, potato starch, icing sugar, butter, egg, egg yolk, and salt. Blend until dough forms.
- Roll out the dough on a floured surface to about 5mm thick.
- Cut out cookies using round cutters. Use smaller cutters to create monster faces.
- Place cookies on the trays and bake for 10-12 minutes until lightly golden.
- Let cool, then spread strawberry jam on one cookie and sandwich with another.
Notes
Experiment with different cookie shapes for various “monsters.” Add food coloring to the dough for a more vibrant look.
