    • 1/4 tsp baking powder
    • 1/4 tsp espresso powder
    • 1 Tbsp milk (any kind)
    • 9 large marshmallows, cut in half (18 halves)
    • 1/2 cup semi-sweet chocolate chips
    • 1/2 tsp vegetable oil
  • Toppings (Optional)
    • Sprinkles
    • Andes Mint Bits
    • Toffee Bits
    • Nuts

Instructions

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, cocoa powder, salt, baking soda, baking powder, and espresso powder.
  • Gradually incorporate the dry ingredients into the wet mixture, adding milk as needed to achieve a soft dough.
  • Scoop tablespoon-sized amounts of dough and roll into balls. Place on a baking sheet lined with parchment paper.
  • Use your thumb to create an indentation in each cookie. Fill the indentation with half a marshmallow.
  • Bake for 10-12 minutes or until the edges are set.
  • Let cool slightly, then melt the chocolate chips with vegetable oil and drizzle over the cookies.
  • Add toppings as desired before the chocolate sets.
