- 1/4 tsp espresso powder
- 1 Tbsp milk (any kind)
- 9 large marshmallows, cut in half (18 halves)
- 1/2 cup semi-sweet chocolate chips
- 1/2 tsp vegetable oil

Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, salt, baking soda, baking powder, and espresso powder.
- Gradually incorporate the dry ingredients into the wet mixture, adding milk as needed to achieve a soft dough.
- Scoop tablespoon-sized amounts of dough and roll into balls. Place on a baking sheet lined with parchment paper.
- Use your thumb to create an indentation in each cookie. Fill the indentation with half a marshmallow.
- Bake for 10-12 minutes or until the edges are set.
- Let cool slightly, then melt the chocolate chips with vegetable oil and drizzle over the cookies.
- Add toppings as desired before the chocolate sets.
