- Cooking spray
- ½ medium onion, chopped
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 ½ cups chicken broth
- 1 (4 ounce) can canned green chile peppers, chopped
- 1 teaspoon ground cumin
- 1 ½ cups canned peeled and diced tomatoes
- ½ cup chopped green bell pepper
- ½ cup medium shrimp, peeled and deveined
- ½ pound cod fillets, cut into chunks
- ¾ cup plain nonfat yogurt
Instructions
- Spray a large pot with cooking spray and heat over medium heat.
- Add the chopped onion and minced garlic, sauté until fragrant and soft.
- Stir in the chili powder and cook for another minute.
- Pour in the chicken broth and bring to a simmer.
- Add the chopped green chile peppers, ground cumin, diced tomatoes, and chopped green bell pepper. Simmer for 10 minutes.
- Add the shrimp and cod fillets, cook until the seafood is opaque and cooked through, about 5-7 minutes.
- Remove from heat and stir in the plain nonfat yogurt.
Notes
Serve hot, garnished with fresh herbs if desired.
