A flavorful and nutritious fish soup made with a variety of fresh ingredients.


Ingredients

  • Cooking spray
  • ½ medium onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 1 ½ cups chicken broth
  • 1 (4 ounce) can canned green chile peppers, chopped
  • 1 teaspoon ground cumin
  • 1 ½ cups canned peeled and diced tomatoes
  • ½ cup chopped green bell pepper
  • ½ cup medium shrimp, peeled and deveined
  • ½ pound cod fillets, cut into chunks
  • ¾ cup plain nonfat yogurt

Instructions

  • Spray a large pot with cooking spray and heat over medium heat.
  • Add the chopped onion and minced garlic, sauté until fragrant and soft.
  • Stir in the chili powder and cook for another minute.
  • Pour in the chicken broth and bring to a simmer.
  • Add the chopped green chile peppers, ground cumin, diced tomatoes, and chopped green bell pepper. Simmer for 10 minutes.
  • Add the shrimp and cod fillets, cook until the seafood is opaque and cooked through, about 5-7 minutes.
  • Remove from heat and stir in the plain nonfat yogurt.

Notes

Serve hot, garnished with fresh herbs if desired.
